This Oatmeal Banana Muffin Recipe is absolutely amazing. These muffins are super easy to make, and are something yummy that the whole family will enjoy, I promise!
I have to be honest, I hate bananas. I think it’s the texture…I just don’t like the mushiness! But man, I can’t get enough of these muffins! The flavor of bananas mixed with cinnamon and a hint of nutmeg is so delicious! They’re so moist, and the topping adds a little needed sweetness.
Let me tell you, they are a HIT with the kids, too! We’re not a cereal family, so every morning I have to get up and make a gourmet breakfast and it gets tiring. These Oatmeal Banana Muffins are so easy to throw in a bag and heat up in the microwave the next morning, slap some butter on, and BAM, breakfast done. I mean, oatmeal is healthy right? Give them a try, you won’t be disappointed!
Oatmeal Banana Muffins
Ingredients:
1 1/2 Cups uncooked oatmeal
1 1/4 Cups flour
1/2 Cup sugar
1 1/2 Tsp baking powder
1 Tsp baking soda
1/4 Tsp salt
1 Tsp cinnamon
Pinch of ground nutmeg
1 whole egg
1/4 Cup oil
1 Tsp vanilla extract
3 whole ripe bananas mashed
Optional: Add a handful of raisins
Topping
1/2 Cup oatmeal
1/4 Tsp cinnamon
2 Tbsp brown sugar
2 Tbsp melted butter
Directions:
In a large bowl mix oatmeal, flour, baking powder, baking soda, cinnamon, nutmeg and sugar
In a smaller bowl mix egg, oil and vanilla. Add to dry ingredients and stir
Stir in mashed bananas
Divide into 12 sprayed or lined muffin tins
In another bowl combine topping ingredients and sprinkle over muffin batter
Bake at 375 degrees for 19 minutes
