This Double Chocolate Muffin Recipe is to die for. These muffins are super easy to make! Trust me, everyone will want to eat these! I don’t know about you, but I’m a hardcore chocolate lover. Something about cocoa being mixed in the batter makes the chocolate treat extra dreamy.
I’m warning you, though, if you make them you might want to eat them all in one sitting! Once they’ve cooled, I like to reheat mine up in the microwave so the chocolate remelts and eat it with vanilla bean ice cream. They’re also great with a side of coffee! hehe They’re just SO GOOD you guys. Let’s get started!
Double Chocolate Muffin Recipe
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 1/4 cups granulated white sugar
- 1/2 cup dutch-processed cocoa powder
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Directions:
Preheat oven to 425 degrees. Line a muffin pan with muffin liners and set aside
In a large bowl mix together flour, sugar, cocoa, baking powder and salt
In another bowl whisk eggs, buttermilk, oil and vanilla until combined
Add dry ingredients to the wet ingredients and stir until combined. Fold in chocolate chips
Fill the muffin liners with batter until almost full. Bake at 425 degrees for 5 minutes then lower temperature to 350 degrees and bake additional 15 minutes or until toothpick in the center comes out nice and clean. Every oven is different, so check your muffins at the 18 minute total time baking mark to see how they’re doing.
Let cool at room temperature. Enjoy!
